Easy Chickpea Curry

Ingredients

  • 1 ½ tbsp Olive Oil
  • 1 whole Yellow Onion
  • 2 cloves Garlic
  • 1 ½ tbsp Mild Curry Paste
  • 1 can (14.5 oz) Crushed Tomatoes
  • 1 can (13.5 oz) Coconut Milk
  • 1 ½ can (15 oz) Chickpeas
  • 1 whole Lime
  • ¾ tsp Granulated Sugar
  • 1 ½ cups Baby Spinach
  • 1 ½ cups White Rice
  • ¼ cup Fresh Cilantro

Instructions

  1. Cook the rice according to package directions so it is ready when the curry is done.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the onion and sauté for 5 minutes until softened.
  3. Add the minced garlic and curry paste, stirring constantly for 1 minute until fragrant.
  4. Pour in the crushed tomatoes, coconut milk, and chickpeas. Bring to a boil, then reduce heat and simmer for 10 minutes, stirring occasionally.
  5. Stir in the lime juice, sugar, and baby spinach. Cook for 1 minute until the spinach has wilted. Season with salt and pepper to taste.
  6. Serve the curry over rice and garnish with chopped cilantro.
