Creamy Lemon Orzo with White Beans & Spinach

Ingredients

  • 12 oz Orzo Pasta
  • 1 can (15 oz) Cannellini Beans
  • 4 cups Baby Spinach
  • 3 ½ cups Vegetable Broth
  • 4 cloves Garlic
  • 1 whole Lemon
  • 3 tbsp Nutritional Yeast
  • 2 tbsp Olive Oil
  • ¼ tsp Red Pepper Flakes

Instructions

  1. Heat olive oil in a large pot over medium heat. Add garlic and red pepper flakes, stir 30 seconds.
  2. Add orzo and stir 1 minute to lightly toast.
  3. Pour in vegetable broth. Bring to a simmer, then cook 10–12 minutes, stirring frequently, until orzo is tender and creamy.
  4. Stir in white beans, baby spinach, lemon zest, lemon juice, and nutritional yeast. Cook 1 minute until spinach wilts.
  5. Season with salt and pepper to taste.
