
Chickpea Omelet
Savory chickpea flour omelets seasoned with nutritional yeast and green onions, pan-cooked until golden and served with fresh toppings.

Ingredients
- 1 ½ cups Chickpea Flour
- ¾ tsp Onion Powder
- ¾ tsp Garlic Powder
- ½ cup Nutritional Yeast
- ¾ tsp Baking Soda
- 4 whole Green Onions
- 6 oz Cremini Mushrooms
- 1 cup Cherry Tomatoes
- 1 cup Baby Spinach
- ½ cup Salsa
Instructions
- In a medium bowl, whisk together the chickpea flour, onion powder, garlic powder, nutritional yeast, and baking soda. Add 1½ cups water and stir until a smooth batter forms. Season with salt and pepper to taste.
- Heat a nonstick skillet over medium heat. Lightly spray or wipe with oil. Pour roughly one-quarter of the batter into the pan to form a 6-inch round.
- Scatter a portion of the chopped green onions and sautéed mushrooms over the surface of the omelet while it cooks, about 3 to 4 minutes, until the edges look set and the bottom is golden brown.
- Flip the omelet and cook for 1 to 2 minutes more until the second side is lightly browned. Repeat with the remaining batter to make 4 omelets total.
- Serve each omelet topped with cherry tomatoes, baby spinach, and salsa.
