Chickpea Omelet

  • 1 ½ cups Chickpea Flour
  • ¾ tsp Onion Powder
  • ¾ tsp Garlic Powder
  • ½ cup Nutritional Yeast
  • ¾ tsp Baking Soda
  • 4 whole Green Onions
  • 6 oz Cremini Mushrooms
  • 1 cup Cherry Tomatoes
  • 1 cup Baby Spinach
  • ½ cup Salsa

Instructions

  1. In a medium bowl, whisk together the chickpea flour, onion powder, garlic powder, nutritional yeast, and baking soda. Add 1½ cups water and stir until a smooth batter forms. Season with salt and pepper to taste.
  2. Heat a nonstick skillet over medium heat. Lightly spray or wipe with oil. Pour roughly one-quarter of the batter into the pan to form a 6-inch round.
  3. Scatter a portion of the chopped green onions and sautéed mushrooms over the surface of the omelet while it cooks, about 3 to 4 minutes, until the edges look set and the bottom is golden brown.
  4. Flip the omelet and cook for 1 to 2 minutes more until the second side is lightly browned. Repeat with the remaining batter to make 4 omelets total.
  5. Serve each omelet topped with cherry tomatoes, baby spinach, and salsa.
