Carrot Hot Dogs

Marinated carrots simmered in smoky brine and grilled until tender make a satisfying plant-based twist on classic backyard hot dogs.

  • 4 whole Carrots
  • 1 ½ cups Vegetable Broth
  • 3 tbsp Apple Cider Vinegar
  • 2 tbsp Soy Sauce
  • 1 tbsp Maple Syrup
  • 2 tsp Liquid Smoke
  • ¾ tsp Smoked Paprika
  • 1 clove Garlic
  • 1 tbsp Vegan Worcestershire Sauce
  • 1 tbsp Olive Oil
  • 4 whole Hot Dog Buns

Instructions

  1. Peel the carrots and trim the ends so they match the length of your hot dog buns. Use the peeler to shave them to a roughly uniform width and round the ends to resemble hot dogs.
  2. In a medium sauté pan, combine the vegetable broth, apple cider vinegar, soy sauce, maple syrup, liquid smoke, smoked paprika, vegan Worcestershire sauce, and garlic. Stir to combine.
  3. Add the carrots to the pan and bring to a boil over medium-high heat. Reduce to a simmer and cook until the carrots are fork-tender, about 10 to 12 minutes. Remove from heat and let rest 5 minutes. Season with salt and pepper to taste.
  4. Preheat a grill or grill pan to medium-high heat. Remove the carrots from the cooking liquid and brush all over with olive oil.
  5. Grill the carrots for 3 to 4 minutes per side until grill marks form. During the last minute, place the buns cut-side down on the grill and toast for 1 minute.
  6. Place each carrot dog in a bun and serve with your favorite toppings.
