
BBQ Jackfruit Sandwiches with Avocado Slaw

- 2 can (15 oz) Young Green Jackfruit In Water
- 3 tbsp Bbq Seasoning
- ½ cup Vegan Bbq Sauce
- 1 tbsp Olive Oil
- ½ whole Avocado
- 1 tbsp Maple Syrup
- 1 whole Lime
- 1 ½ cups Coleslaw Mix
- 4 whole Whole Grain Vegan Buns
- ½ cup Roasted Salted Cashews
Instructions
- Drain, rinse, and thoroughly dry the jackfruit. Trim and discard the firm core pieces, then place the jackfruit in a large bowl. Add the BBQ seasoning and toss to coat evenly.
- Heat olive oil in a large skillet over medium heat. Add the seasoned jackfruit and cook for 2 to 3 minutes, stirring occasionally, until lightly browned.
- Add the BBQ sauce and about 3 tablespoons of water to thin it into a sauce. Stir to combine, reduce heat to medium-low, cover, and cook for 20 minutes. Use two forks to shred the jackfruit as it cooks for a pulled texture.
- While the jackfruit simmers, whisk together the mashed avocado, maple syrup, and lime juice in a bowl until smooth. Season with salt and pepper to taste, then toss with the coleslaw mix. Refrigerate until ready to serve.
- Remove the lid from the skillet, increase heat to medium-high, and cook the jackfruit for 2 to 3 more minutes to develop extra color and texture. Remove from heat.
- Toast the buns lightly if desired. Pile avocado slaw onto the bottom buns, top with BBQ jackfruit and a handful of roasted cashews, and drizzle with extra BBQ sauce before serving.
