
Classic Lentil Sloppy Joes

- 1 cup Dry Green Lentils
- 1 can (15 oz) Tomato Sauce
- 1 whole Yellow Onion
- 1 whole Green Bell Pepper
- 3 cloves Garlic
- 1 ½ cups Vegetable Broth
- 2 tbsp Tomato Paste
- 2 tbsp Brown Sugar
- 1 tbsp Yellow Mustard
- 1 tbsp Apple Cider Vinegar
- 1 tsp Smoked Paprika
- 1 tsp Chili Powder
- 1 tbsp Olive Oil
- 4 whole Hamburger Buns
- Salt
- Black Pepper
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion and bell pepper for 5 minutes until softened.
- Add garlic, smoked paprika, and chili powder. Stir for 30 seconds until fragrant.
- Add lentils, vegetable broth, tomato sauce, and tomato paste. Stir to combine.
- Bring to a boil, then reduce heat and simmer 22–25 minutes, stirring occasionally, until lentils are tender and the mixture is thick.
- Stir in brown sugar, yellow mustard, and apple cider vinegar. Season with salt and pepper. Cook 2 more minutes.
- Spoon generously onto toasted hamburger buns.
