  • 1 cup Dry Green Lentils
  • 1 can (15 oz) Tomato Sauce
  • 1 whole Yellow Onion
  • 1 whole Green Bell Pepper
  • 3 cloves Garlic
  • 1 ½ cups Vegetable Broth
  • 2 tbsp Tomato Paste
  • 2 tbsp Brown Sugar
  • 1 tbsp Yellow Mustard
  • 1 tbsp Apple Cider Vinegar
  • 1 tsp Smoked Paprika
  • 1 tsp Chili Powder
  • 1 tbsp Olive Oil
  • 4 whole Hamburger Buns
  • Salt
  • Black Pepper

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion and bell pepper for 5 minutes until softened.
  2. Add garlic, smoked paprika, and chili powder. Stir for 30 seconds until fragrant.
  3. Add lentils, vegetable broth, tomato sauce, and tomato paste. Stir to combine.
  4. Bring to a boil, then reduce heat and simmer 22–25 minutes, stirring occasionally, until lentils are tender and the mixture is thick.
  5. Stir in brown sugar, yellow mustard, and apple cider vinegar. Season with salt and pepper. Cook 2 more minutes.
  6. Spoon generously onto toasted hamburger buns.
