
30-Minute White Bean Chili
A creamy white bean chili with green chiles, cumin, and oregano. Lighter than a red chili but just as comforting.

Ingredients
- 2 cans (15 oz each) Cannellini Beans
- 1 can (15 oz) Great Northern Beans
- 1 can (4 oz) Diced Green Chiles
- 1 whole Yellow Onion
- 4 cloves Garlic
- 2 tsp Ground Cumin
- 1 tsp Dried Oregano
- 4 cups Vegetable Broth
- 2 tbsp Olive Oil
- 1 whole Avocado
- ¼ cup Fresh Cilantro
- 1 whole Lime
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion 4 minutes. Add garlic, cumin, and oregano. Stir 1 minute.
- Add green chiles, all beans, and vegetable broth. Bring to a boil.
- Use an immersion blender to partially blend the chili, leaving most beans whole for texture (or transfer 1 cup to a blender and return).
- Simmer 15 minutes until thickened. Season with salt to taste.
- Serve topped with diced avocado, fresh cilantro, and lime wedges.
