A creamy white bean chili with green chiles, cumin, and oregano. Lighter than a red chili but just as comforting.

Ingredients

  • 2 cans (15 oz each) Cannellini Beans
  • 1 can (15 oz) Great Northern Beans
  • 1 can (4 oz) Diced Green Chiles
  • 1 whole Yellow Onion
  • 4 cloves Garlic
  • 2 tsp Ground Cumin
  • 1 tsp Dried Oregano
  • 4 cups Vegetable Broth
  • 2 tbsp Olive Oil
  • 1 whole Avocado
  • ¼ cup Fresh Cilantro
  • 1 whole Lime

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion 4 minutes. Add garlic, cumin, and oregano. Stir 1 minute.
  2. Add green chiles, all beans, and vegetable broth. Bring to a boil.
  3. Use an immersion blender to partially blend the chili, leaving most beans whole for texture (or transfer 1 cup to a blender and return).
  4. Simmer 15 minutes until thickened. Season with salt to taste.
  5. Serve topped with diced avocado, fresh cilantro, and lime wedges.
